REFINING FOR CHOCOLATE-CREAM AND ICE-CREAM SAUCE
PRENCIPLE OF OPERATION
Double tube ball refiner is a self contained machine that willreadily adapt to any system for chocolate , cream or sesame. Themachine is designed 5 parts which is synchronized each others byactuer valves. The parts as follow
- A 1200 kgs melanger
- 2 pieces thinner tubes
- 2 pieces storage tanks
Except main platform which is placed the melanger and tubes ,all parts are manufactured completely stainless steel.
Melanger which is the first section of refiner is jacketed andcompletely 304 quality stainless steel. Inside the melanger, thereare mixing arms and iron balls to mixing the dough as pre-mixer .According to the customers requests, the system can be automaticwhich is driven by servomotors and actuer valves .
After the melanger, the dough is divided to the thinner tubes bypumps in the system. The thinner tubes are reduced the dough downto 20-25 microns
By closing the actuer valves of tubes , the dough discharges tothe storage tanks in the system
For a problem free production , the ball refiners must run by awater cooling system (CHILLER )
TECHNICAL DETAILS
• Melanger, thinner tubes and storage tanks are manufacturedstainless steel
• Iron balls are manufactured food-compatible metal and hardyagainst any corrosion
• By actuary valves , the cooling system runs automaticly
• Three chocolate pumps in the system are geared andfood-compatible
• The filters in tubes and in the melanger don’t allow anychocolate leaking
• Storage tanks in front of the thinner tubes are jacketed
• In the storage tanks there are mixing arms to keep the producthomogeneous
• The storage tanks temperature controlled are provided byPLC
• There are level sensors on the storage tanks to keep theproduct level stable
• Capasity : 600- 650 kgs/ h depends on in feed productionthickness . 1200 kgs per bach ( One bach approx 2 h 15 min )
• Besides powdered sugar, christalized sugar also can be used inthe ball refiners as raw material. But , in this case, the capasitywill be less than the real capasity
