FUNCTION | There is very good evidence that the lutein in foodhelps protect against cataracts and macular degeneration, twocommon, age-related eye disorders. Lutein and another carotenoid,zeaxanthin, form the yellow pigment of the retina and absorb bluelight, a harmful component of sunlight. In addition, new evidencefrom a study completed last year showed that lutein may helpprotect against clogging of the carotid arteries in the neck, anindication of atherosclerosis, the disease that leads to most heartattacks. Just the opposite occurred among those with the lowestlutein levels at the outset arterial clogging worsened. Theresearchers also doused sections of human arteries removed duringsurgery with high concentrations of lutein. They found that thesearteries attracted fewer white cells, which are involved in theprocess that results in clogging.
