Cinnamon Bark
When the bark color, turn into brown the stems are mature enoughfor harvesting. In a well managed Cinnamon Garden, Harvesting(Coppicing) could be done twice in a year, after removing the topsand the branches, Harvested sticks are carried to the Peeling Shed.Initially the outer corky tissues are scraped and then peelers ruba brass rod on the bark to loosen from hard wood, after looseningthe Peeling is done with a special small round knife. Cinnamonbarks are then joined together by overlaps and hollow of which hasbeen filled with smaller pieces, to form 106.7cm (42in) longcinnamon Quills. Quills are air dried indoors for about few daysmay be up to a week.
The next year, about a dozen shoots will form from the roots. Theseshoots are then stripped of their bark, which is left to dry. onlythe thin (0.5 mm)of the inner bark is used; the outer woody portionis removed, leaving a meter-long Cinnamon strips that curl intorolls ("Quills") on drying. Each dried quill comprises strips fromnumerous shoots packed together. These Quills are then cut into5–10 cm lengths for sale.
