Greek red saffron or "Crocus", a pure product of the Greekagriculture, is considered the best in the world. A precious spice,adds an exquisite flavor and color to food and drinks. It is alsoused in distilleries, dairy products and in numerous otherapplications.
A miracle of nature with a distinctive aroma and a honey-liketaste, Saffron is the world''s most expensive and unique in itsorigin. Saffron is the dried stigmas of the flower crocus. Morethan 15, 000 of the plant’s flowers are needed to produce just 100gr of red Saffron. Greek saffron, has a coloring strength of 256,verified by laboratory reports, which is 66 points, higher than theminimum international standard for all saffron.

 

Grade
• Saffron types are graded by quality according to laboratorymeasurements of such characteristics as crocin (colour),picrocrocin (taste), and safranal (fragrance) content.
• A uniform set of international standards in saffron grading wasestablished by the International Organization for Standardization,which is an international federation of national standards bodies.Namely, ISO 3632 TS deals exclusively with saffron.
• These data are measured through spectrophotometry reports atcertified testing laboratories worldwide. These colour gradesproceed from grades with absorbances lower than 80 (for allcategory IV saffron) up to 190 or greater (for category I). Theworld''s finest samples (the selected most red-maroon tips ofstigmas picked from the finest flowers) receive absorbance scoresin excess of 250. Market prices for saffron types follow directlyfrom these ISO scores

 

SAFFRON COMPOSITION
Saffron is among the spices imparting intense colour and flavour tofood and beverages.
Key substances:
• crocins, colour giving, water-soluble carotenoids • picrocrocin,responsible for flavour • safranal, main component of the essentialoil
The above mentioned substances are used for the ISO (ISO/TS 3632)evaluation of Saffron.
Saffron (Crocus Sativus) is also known to be rich in Beta and Gammacarotene, together with crocin and picrocrocin. All thesesubstances are antioxidants. In humans, carotenoids such asbeta-carotene are a precursor to vitamin A, a pigment essential forgood vision, and carotenoids can also act as antioxidants. Theseobservations lead to studies on saffron’s antioxidant effect.
