Regional wine from Thrace region. Wine is made from grapevariety Pinot Noir from own vineyards of Vinex Slavyantsi AD.Harvest is made by hand and the grape was shelled and added 3 g per100 kg grapes pectoletic enzymes, 10 g per 100 kg grapes enologicaltannins and 1-3 g per hl SO2 and following maceration for 48 hours.Following fermentation under controlled temperature 25 27 C with 20g per hl selected yeast. After alcohol fermentation followingmalolactic fermentation for 30 60 days. After that is added 3-5gSO2 per hl and following sterility filtering and bottling.
The wine is characterized with dark ruby color, typical bouquetof strawberry and cherry, the taste is soft and balanced.
