a-galactoside is a kind of oligosaccharide formed by joining a carbohydrate (sugar) molecule to one or a few of galactose molecules through a-1,6 glycosidic bond. The main varieties of a-galactoside include raffinose, stachyose and veroascose, which are mainly found in bean. The main kinds of a-galactoside contained in soybean are raffinose(1.4%)and stachyose(5.2%).The main kind of a-galactoside contained in cottonseed meal is raffinose(3.6%). a-galactoside has strong thermal stability and it can’t be degraded even at the high temperature of 140°C, so the normal processing method can not lead to the inactivation of a-galactoside. Due to the lack of a-galactosidase in enteric canal and the fermentation of escherichia coli, a-galactoside ,which is also called flatulence factor, after entering into colon, is easy to convert into volatile fatty acid and release CO, H2 and a little of CH4. This will lead to the flatulence, emesis and dysentery and lower the digestible energy of the raw materials that are rich in a-galactoside.
