Erythritol, chemical name:1,2,3,4-Butanetetraol, melting point:119???-123???, is powder with a transparent white brilliantappearance, tastes sweet slightly, crystallizes easily and feelspleasantly cool, about 70% sweetness and only 1/20 caloric abilitycompared with cane sugar.

Erythritol is a white crystalline powder with a clean sweettaste that is similar to sucrose. It occurs naturally in many foodssuch as pears, melons, grapes, mushrooms, wine, soy sauce andcheese.  Erythritol is produced by fermentation using yeast.It is approximately 60% as sweet as sucrose and flows easily due toits non-hygroscopic character. Like other polyols, erythritol doesnot promote tooth decay and is safe for people with diabetes.However, erythritol''s caloric value of zero calories per gramdistinguishes it from other polyols. Erythritol is the newestmember of the polyol family and is authorized for use in foods inthe EU under the same conditions as all other polyols (except that0 kcal/g should be used for nutritional labelling purposes).

Usage:

Erythritol characterizes low caloric ability, excellent biologictolerance, good thermo-stability, low hygroscopicity, low icepoint. As substitute of cane sugar, erythritol is widely used inchewing gum, soft drink, jelly, ice-cream, baking and roastingfoods, cakes, dairy produce, chocolate, all kinds candies, dessertetc.

Erythritol can not be degraded by enzyme, so it is very suitablefor patients suffering diabetes, obesity, hypertension, cardiacdisease because of no catabolism.

Erythritol cann’t ferment in colon, so it has the function toproliferate clearly bifidobacterium, avoid gastroenteric discomfortand enhance the immune ability.
