Jasmine teas are made by scenting green tea with fresh jasmine flowers which arepicked during the day but stored until the evening when they open to release theirperfume. The dried tea and flowers are piled for several hours. When the heatinside the pile increases, the flowers begin to release their perfume, allowingthe tea to absorb.
